Miracle Microwave Chocolate Cake

How many years have I been making and ruining cakes? Seems like forever. Last week was Aunty Mary’s birthday and before I could think about being a good niece and whipping up a disaster, Ged-the-husband rushed out to Sainsbury’s to buy her a cake.

It was actually very good for a shop bought sponge but it still seems wrong to buy a birthday cake. After all, it’s the thought that counts and everyone should appreciate my efforts as, well, as it IS such an effort for me.

It was a pretty delicious cake and there were no complaints but all that greasing and lining and watching and praying. Good God what a faff!

So yesterday I saw a recipe for a microwave mug cake that promised to take only 5 minutes to prepare and cook with no mess and no mixing bowl.
It was on the Love Food website and was supposed to be easy peasy.

It wasn’t. Not for me anyway. And yes, I did follow the instructions very carefully.

I’ve been tweaking it today and the recipe is now foolproof. Even I can make it without disaster striking.

Here it is,

20140603-143424.jpgIn a large mug or bowl put 2 heaped tablespoons of self raising flour.

20140603-143541.jpgAdd 2 heaped tablespoons of sugar.

20140603-143643.jpgMix in 1 heaped tablespoon of cocoa powder.

20140603-143730.jpgAdd 2 heaped tablespoons of full fat mayonnaise.

20140603-143817.jpgAdd 1 egg and mix with a fork.

20140603-143900.jpgWhack it in the microwave for 2 mins 30. Watch it rise. Leave for a minute after it’s cooked.

And there you have a bloody gorgeous chocolatey heaven made with no mess, no fuel costs and about 20p worth of ingredients.

I tipped the cake out of the cup – it looked like this –

20140603-144505.jpg then I poured a bit of double cream into the cup, broke 4 Asda Value dark chocolate pieces into it, melted (about 30 seconds) in the microwave, mixed it up then popped the cake back in and covered it with the yummy sauce.

I am a domestic goddess. Honest.
